Day 16 Hike with horses, Basque Burnt Cheesecake, and hot pot

3) M Made Basque Burnt Cheesecake
Ingredients
- 8oz. cream cheese (1 package)
- 1/2 cup whipping cream
- 1 tbsp flour
- 1/2 cup sugar
- 2 eggs

1. Press a sheet of parchment paper into the 6” cake pan, making sure the parchment comes 2” above top of the cake pan on all sides. At the same time, set the rack in the middle of the oven, preheat to 430F
2. Prepare a bowl of warm water and put the mixing bowl in the warm water. Add the cream cheese, repeatedly stir and pressure it evenly. Then, add sugar and continue to mix until smooth and creamy.
3. Prepare two eggs and add them in one at a time. Thoroughly mix in the first egg with cream cheese before adding another egg.
4. Add in whipping cream and four, mix well.
5. Pour batter into cake pan. Bake cheesecake until deeply golden grown on top and still very jiggly in the center, about 25-35 minutes.
